Hainanese Chicken Rice


















Ingredients
  • 2 chicken drumsticks (Remove bone and skin and cut into bite-sized pieces. Then marinate with 1 tsp concentrated chicken stock, 1 tsp corn flour and a dash of pepper for at least 1 hour or leave it overnight.)
  • 2 cups of rice – washed
  • 2 tbsp chopped shallots
  • 2 tbsp chopped garlic
  • 2 tbsp chopped ginger
  • 3 tbsp oil
  • 5 tsp concentrated chicken stock
  • Slightly less than 2 cups of water
Method
  1. Heat oil in wok/pan using medium heat. Add in chopped shallots, garlic and ginger and fry till aromatic.
  2. Add rice and concentrated chicken stock and mix well. Turn off the flame.
  3. Pour the rice into a rice cooker and add in water. Place the chicken pieces on top of rice and set the rice cooker to cook.
  4. Switch off the rice cooker once it turns to warm function. Let the cooked chicken rice stand cover in the pot for another 10 to 15 minutes.
  5. Dish out and serve hot.

Chicken Wings in Special Sauce

Chicken Wings in Special Sauce


Ingredients

  • 6 chicken wings
  • 1 tablespoon dark soy sauce
  • 2 tablespoons light soy sauce, or according to taste
  • 2 tablespoons sugar
  • 1 teaspoon sesame oil
  • 3 tablespoon chopped garlic
  • 1 teaspoon black pepper
  • 300 ml water


Steps:

  1. Marinate chicken wings in a mixture of the soy sauce, sugar, sesame oil, garlic and coarsely pounded black pepper overnight or for at least one hour.
  2. Pour chicken wings together with marinade into a wok/pan.
  3. Add water and bring to the boil at high heat for five minutes, with the wok covered.
  4. Remove the lid, and continue to simmer over low heat till sauce has thickened.
  5. Dish up and serve hot.
