Ingredients
- 2 chicken drumsticks (Remove bone and skin and cut into bite-sized pieces. Then marinate with 1 tsp concentrated chicken stock, 1 tsp corn flour and a dash of pepper for at least 1 hour or leave it overnight.)
- 2 cups of rice – washed
- 2 tbsp chopped shallots
- 2 tbsp chopped garlic
- 2 tbsp chopped ginger
- 3 tbsp oil
- 5 tsp concentrated chicken stock
- Slightly less than 2 cups of water
- Heat oil in wok/pan using medium heat. Add in chopped shallots, garlic and ginger and fry till aromatic.
- Add rice and concentrated chicken stock and mix well. Turn off the flame.
- Pour the rice into a rice cooker and add in water. Place the chicken pieces on top of rice and set the rice cooker to cook.
- Switch off the rice cooker once it turns to warm function. Let the cooked chicken rice stand cover in the pot for another 10 to 15 minutes.
- Dish out and serve hot.
